I recently had the pleasure of dining at Haidilao Hotpot in Taichung. Despite having experienced Haidilao in the United States, I was genuinely blown away by the remarkable difference in price and service at this Taiwanese establishment. First and foremost, let's talk about the star of the show: the broth. I had the opportunity to try all four soup bases, and each one was a masterpiece. From the depth of flavors to the aromatic spices, every sip was a journey into culinary perfection. The balance of herbs and spices in the broths was truly commendable, making the hotpot experience here unparalleled.
The freshness of the meat and seafood platters was unparalleled. The meats were tender, and the seafood was incredibly fresh, a testament to their commitment to quality. I was particularly impressed by the meticulous attention to detail, including the staff's willingness to help with intricate tasks such as preparing crab meat.
